In Rialp, gastronomy is a living expression of its land and its people.

The cuisine of the municipality combines Pallars tradition with top-quality local produce, offering authentic, flavourful dishes full of personality.

Meats

Meats are undisputed stars of the table: xisqueta lamb, native to Pallars, gives life to the traditional palpis — cooked with the leg —, while Bruna dels Pirineus beef, foal meat and game meats (such as wild boar or deer) bring intensity and character. Pork, the base of most traditional cured meats, offers flavours such as xolís, llonganissa, secallona, white and black botifarra and bull de llengua.

Among the most traditional dishes are confitat, made with ribs and botifarra slowly cooked in oil in an earthenware jar; Carnival stuffing, made with bread, eggs, raisins, bacon and spices; and hearty winter broths such as vianda or calderada, ideal for cold days.

To finish the meal, nothing beats some homemade desserts such as filiberto, prunes with cognac, caramelised walnuts, wafer rolls, custards or creams, accompanied by a good mountain wine or a glass of Pallars ratafia.

In the shops and artisan workshops of Rialp, Surp and Escàs, you will find a wide selection of zero-kilometre products: raw-milk cheeses, traditional cured meats, local meats and other delicacies made with local ingredients.
